Wnterizing Ethos 20A

I am a new owner of a 2023 Ethos 20A and have jumped into the winterization process.  All was well until page 64, line 6.  It says "Close the fresh water shut off valve".  I am thinking that is a valve to keep water/antifreeze from entering the holding tank.  Is that correct?  Where would I find such valve?  As a retired builder, I am wondering why Entegra didn't put all of the valves on a small manifold, right behind the grill under the bed?  They could be easily reached, labeled, checked...  I will probably do this unless someone convinces me its a bad idea.  Thanks and hope to see you on the road!
